There’s something undeniably comforting about a fresh, creamy potato egg salad, and this recipe is no exception! This dish brings together tender potatoes, rich hard-boiled eggs, and vibrant, crunchy veggies like celery and carrots, all brought together with the zing of dill, pickles, and just the right touch of pickle juice. It’s the perfect side dish for any gathering, picnic, or family meal. Each bite is a delightful harmony of flavors that’ll leave everyone coming back for more.
Ingredients:
- 6 medium potatoes (peeled, boiled, and diced)
- 4 large eggs (hard-boiled and chopped)
- 2 stalks of celery (diced)
- 2 carrots (peeled and finely chopped)
- 4 green onions (sliced, both green and white parts)
- 1/4 cup fresh dill (chopped)
- 1/4 cup pickles (chopped, dill pickles preferred)
- 2 tablespoons pickle juice (from the pickle jar)
- 1 cup mayonnaise
- 2 tablespoons mustard (yellow or Dijon, based on preference)
- Salt and black pepper to taste
Method:
1. Boil the Potatoes and Eggs: Begin by boiling your potatoes in a pot of salted water until they are fork-tender, about 15-20 minutes. Drain them and let them cool. At the same time, boil your eggs for about 10 minutes to achieve that perfect hard boil. Once done, peel and chop them into delicious chunks that will add richness to your salad.
2. Prepare the Vegetables: Dice the celery, finely chop the carrots, and slice the green onions (don’t forget both the white and green parts!). The pickles should be chopped into small pieces, and the fresh dill should be finely chopped to infuse its delightful fragrance throughout the salad.
3. Mix the Ingredients: In a large bowl, combine the cooled and diced potatoes, chopped hard-boiled eggs, celery, carrots, green onions, pickles, and dill. Gently mix them together to create a beautiful, colorful base for your salad.
4. Make the Creamy Dressing: In a separate bowl, whisk together the creamy mayonnaise, zesty mustard, and a splash of pickle juice. Stir until it’s smooth, and season with salt and pepper to your liking. The dressing should have a little bit of tang to balance out the creaminess.
5. Combine the Salad and Dressing: Pour the dressing over your potato and egg mixture, and gently fold everything together. Take your time to ensure each piece is well-coated, creating a harmonious blend of flavors.
6. Chill and Serve: For the best results, cover the bowl and let the salad chill in the refrigerator for at least an hour. This will allow all the flavors to come together, making every bite even more irresistible.
