Crispy Oven-Roasted Potato Wedges with Rosemary & Garlic
Ingredients
4 large russet potatoes, scrubbed and cut into wedges
3 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon smoked paprika (optional, for extra depth)
¼ teaspoon red pepper flakes (optional, for a subtle kick)
Instructions
Preheat the oven: Set your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it with olive oil.
Prepare the potatoes: Cut the potatoes into even-sized wedges, about ½ inch thick, so they cook evenly.
Season generously: In a large bowl, toss the wedges with olive oil, garlic, rosemary, salt, pepper, and paprika (if using). Coat every surface for maximum flavour.
Arrange for crispiness: Spread the wedges in a single layer on your baking sheet — no overlapping. Overcrowding will steam them instead of crisping them.
Roast to perfection: Bake for 35–40 minutes, flipping halfway through, until golden and crisp outside, soft and fluffy inside.
Serve and savour: Let them rest for a couple of minutes. For a final flourish, sprinkle with more rosemary and a pinch of sea salt before serving.
