Some dishes don’t just fill your plate — they make your kitchen smell like home. Crispy oven-roasted potato wedges are one of those simple pleasures. Golden on the outside, tender and fluffy inside, these wedges strike the perfect balance between rustic comfort food and a touch of gourmet flair.

In this recipe, hearty russet potatoes are tossed with fragrant rosemary, fresh garlic, sea salt, and just the right drizzle of olive oil. A blast of high heat turns them irresistibly crisp, while the seasoning gives every bite a warm, savoury punch.

Whether you’re serving them next to a backyard burger, piling them high on a brunch table, or simply enjoying them with a favourite dipping sauce, these wedges will have everyone reaching for “just one more.”

Crispy Oven-Roasted Potato Wedges with Rosemary & Garlic

Ingredients

  • 4 large russet potatoes, scrubbed and cut into wedges

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

  • 1 teaspoon sea salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika (optional, for extra depth)

  • ¼ teaspoon red pepper flakes (optional, for a subtle kick)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it with olive oil.

  2. Prepare the potatoes: Cut the potatoes into even-sized wedges, about ½ inch thick, so they cook evenly.

  3. Season generously: In a large bowl, toss the wedges with olive oil, garlic, rosemary, salt, pepper, and paprika (if using). Coat every surface for maximum flavour.

  4. Arrange for crispiness: Spread the wedges in a single layer on your baking sheet — no overlapping. Overcrowding will steam them instead of crisping them.

  5. Roast to perfection: Bake for 35–40 minutes, flipping halfway through, until golden and crisp outside, soft and fluffy inside.

  6. Serve and savour: Let them rest for a couple of minutes. For a final flourish, sprinkle with more rosemary and a pinch of sea salt before serving.

Serving Suggestions

  • Dip in garlic aioli, smoky chipotle mayo, or classic ketchup.

  • Pair with veggie burgers, grilled salmon, or roasted chicken.

  • Sprinkle with grated parmesan or truffle salt for a gourmet twist.

From my kitchen to yours — these rosemary and garlic potato wedges are the kind of side dish that never feels like “just” a side. They’re the plate-stealers, the conversation-starters, and the comfort food you’ll find yourself making on repeat.
